Chicken Soup for the soul
Mom couldn’t cook dinner at the last minute and the chicken thigh and drumstick were already thawed. So I stepped in and tried to experiment with the food again. This time, I tried another attempt at cooking chicken soup and it turns out quite alright.
Heres what I did.
Saute onion in a pot with virgin olive oil.
Pour enough water into the pot when onion is slightly browned and bring to a boil.
Put in the following
1 tablespoon of pepper corn
4 cloves of garlic
some dried rosemary
some dried oregano
one lime leaf
then put in the chicken pieces and let the pot slimmer for about 15-20 mins. Add salt to taste. Take out the chicken when its cooked and let the soup boil for a while more. Turn off the heat and put the chicken back.
Viola, you have chicken soup with slightly more taste.

Next time try frying the chicken after you’ve cooked it in the soup and let me know what you think.
if you pan fry the chicken a bit before cooking in soup, will add more flavour to your soup.
if you cook the chicken in the soup and then deep fry, will add extra cripsniess to the exterior.
sounds yummy! Was it good?
FF: yup. compliments the coriander marinated pork served with garlic/shallot butter fried rice.
Since we’re on the topic on recipes… Have you tried bread with nuttella and cheese? Good leh…
don’t really like nuttella.. but I do take cheese.. you should try those cheese they sell by the small little block.. not those slice ones.. see which type of cheese you like.
Sounds right to me. Try adding veggies like potatoes, celery and carrots. Doubly shiok! I’ve got a box of cous cous at home. Gonna try to make something out of it.
I didn’t want to add potatoes coz it will thicken the soup. Celery and carrots are alright if you want to add some vege sweetness to the soup. I was going for the semi-pure chicken soup taste.. heh heh..
Cous cous ah, make paelle.
