Chicken in a pot

Every once in a while, I come across an interesting recipe on cooking shows and they look easy to cook. I decide to just blog about them so that I can search them up anywhere if I want to cook. This particular dish is a french version of the chicken soup. It looks quite easy to make. I can’t get the actual amount of ingredients from the show, but I guess I just have to experiment.

Stock
Onions
Carrots
Celery
Whole garlic
Black Pepper corn
Belly Pork

Stuff Chicken
The chef made the stuffing out of the gibblets, I am sure some people don’t like, I will probably substitue with some other meat, maybe like grind pork.

Chop up the gibblets/pork
Add breadcrumbs
Chopped shallots, parsley and garlic
Diced ham/bacon
Mixed together with a couple of eggs, season generously with salt and pepper
Stuff the mixture into the chicken and tie it up

Put the chicken into the pot and simmer for 40 mins.
Take out the vegetables in the stock (they are almost tasteless now).
Put the chicken in followed by some fresh vegetables. The vegetables can be anything you have at hand, cabbage, leeks, carrots, onions, potato, anything at all.

Sauce
You can make this sauce to accompany the dish, but I think I skip it unless I have some dijion mustard on hand.
Some dijion mustard mixed with olive oil and a dash of white wine vinegar. Gherkins (a kind of small cucumber) and carpers are also added. Add some chopped hard boiled eggs and parsley and mix it up with more olive oil. Season it well with salt and pepper.

When the chicken is done, cut it up nicely and place it as well as the stuffing on a plate. Don’t forget the belly pork as well. Its ready to serve. Its enough to serve 6.

    people, I didn’t cook it lah, its from a tv show.
